The Bracha Rishona on Cholent is as follows, If contains significant amount of barley Mezonos If contains minimal barley Borei Pri Hoadama If contains large pieces of meat, also recite Shehakol, and the Bracha Acharona is as follows, Borei Nefashos or Al Hamichya.
The bracha is according to the majority ingredient (in this case, usually haodama). If a significant amount of barley is present, only mezonos is recited. If the amount of barley is insignificant, only haodama should be recited. If it is somewhere in between (which is most common), both brachos should be recited. If large pieces of meat are present, shehakol should be recited as well. Al hamichyah is only recited if a kezayis of barley is eaten within a kedei achilas pras.
