The Bracha Rishona on Gefilte Fish is Shehakol, and the Bracha Acharona is Borei Nefashos.
Although gefilte fish may be prepared with bread crumbs or matza flour, their purpose is just to hold the ground fish and other ingredients together. Thus, only a Shehakol need be said. (See also Shulchan Aruch, Orach Chaim 208b, and Mishnah Berurah 208:8).
